Baked throughout January in France, the galette des rois (king cake) celebrates Epiphany, the day the 3 Kings (les rois) visited the infant Jesus.

A galette des rois is made of a creamy almond filling sandwiched between flaky, buttery layers of puff pastry. It contains a small prize (called a feve or sujet) hidden inside the filling. The lucky guest who finds the feve becomes the King or Queen of the evening & wears a paper crown!
